You need: 4 beetroots cut into big cubes, 1 onions, 1 tin of coconut milk about 400ml, salt and papper to taste, 1 cupe vegetable stock with no msg, 1 tsp crushed ginger, 2 clove garlic crushed, half tsp curry powder, a handfull chop basil, 1cup water.
A hand mixer or a blender is needed

Preparations:
Into a cooking pot, put all the above to cook for 10 minutes without the coconut, Stire once in a while add the coconut milk cook for 4minutes, taste to see if salt and pepper are enough. Blend until creamy. turn off the fire.
Now it is ready to serve
